What "editable" actually means here

People search for an editable conversion because the obvious shortcuts give them something they cannot work with. Take a screenshot of the PDF and you get a picture sitting on top of the grid, with nothing to click into. Use Insert as Object and the PDF lands as an embedded file, not data. Copy and paste, and the whole table collapses into one column of text. In each case the cells look full but you cannot sort, filter, or run a formula.
